The E61 brew group features a temperature-regulating thermosyphon, which helps to keep temperatures at the group head as stable as possible. Speaking of temperature stability, the PID controller allows you to make adjustments to the boiler temperature in 1° increments, so you can experiment with different brew profiles for various roasts. It also doubles as a shot timer during extractions.Â
The Sole is a versatile machine, too: you can plumb it to a direct water line or use the massive 4 L internal reservoir; you can also order it with an installed flow control device, which allows for even further experimentation with brewing specialty coffees.Â
